uidefs just has defines like #define OPEN_ACCEL 'o' or the like, stock has
a function which takes a GNOME_STOCK_MENU_* and returns an accelerator for
it. The stock function also reads a config file with customization.
Federico's suggestion makes sense to me, just use the #define stuff for
now and work on a more comprehensive solution for 1.1. Maybe Cody would be
interested since he wrote the capplet to configure the stock accelerators.
