You want to use Gtk-- if you are planning on fully using the GNOME features.

Most people use Gtk+ directly (ie, the same way as they do in C
without wrappers) and then they write their OO code in C++. This
works for most people.
Gtk-- will have a stable release soon, and will be probably a good
choice then.
