'stable' was used in the old system -> having a single directory for each
GNOME release. root-level version directories didn't scale, because we have
lots of different GNOME releases and categories.

That's what the complete sources/ directory does. Mirrors can choose to
exclude it, and sync their mirrors with link dereferencing.

As I said before, we're considering adding latest/ symlink trees, it's just
a matter of finding the best spot/structure for them.
