Well, first off, they had menus which people would start out with.
After they decided doing it with a mouse was tedious, they would start
to notice the key binding listed next to the command in the menu. :)

ie:

  Cut       &X
  Paste     &V


As for why X, C and V?  C for Copy.  X is like crossing it out (cut).
V just happens to be there with the other keys. :)
