I am pretty new to X11, Unix, Linux, and Gnome. I've been a Mac person for about 20 years now but only dabbled in Unix lately. I want to get Gnome running on my Mac (I have X11 installed but not XFree86). What are my first steps to getting this running?

You can install gnome using darwinports (darwinports.opendarwin.org).

sudo port -dv install control-center will get you the basic gnome stuff. from there you can install gnumeric, abiword etc..

remember to install the x11sdk ...
