How can I track what the user has done: which buttons were clicked, what text was typed, etc. How can I programmatically invoke user actions, such as clicking on buttons and typing in text.

You will need to use at-spi to control the program; gnopernicus, gok and dasher are examples of programs which use at-spi.

Cliicking on a button is invvokiingg an action; see AccessiibleAction functions. Entering teext will use AccessibleText functtioions.
