Hi, Krister.
There are two ways in which you can update to the latest test builds of
gnopernicus and gnome.
The first is to go to gnome.org and download the garnome build scripts, edit
them for your system, which will download all required packages and build a
newer version of gnome in /opt or wherever you wish your new gnome to be
installed.
Then, you can set your user environment variables to point to the new gnome
and not the previous version.
A second build script is called jhbuild. You can check this script out of
gnome's cvs server, and use it to update to the latest versions of gnome.
