This is to some degree in the documentation, though it looks like the
web site copy isn't working.
Briefly, a schema is metainformation about a key, such as its default
value, which application created it, its type, and documentation of
its purpose and possible values.
The schema file is a file you ship with your application containing
the information necessary to install the schema in a GConf database.
An example schema file comes with GConf.
