No, that can't work.  The pathname is hardcoded into all the binaries
(where to look for shared libraries, etc. etc.)

Once you rename the directory you won't be able to reboot into Gnome
again until you build/install the new version.


Another option is to change the garnome setup to install the new version
as ~/garnome-2.8.0, then you can keep both the old and new versions
simultaneously and switch back and forth by tweaking your .xsessionrc
file (or whatever you use).
