Galeon _should_ go fullscreen using F11 .. if this is what you're
already using, could you give more detail to "sort of" please?
mplayer's fullscreen also shows the panels here, if I ask mplayer to go
fullscreen (ie, hit the F key). My solution is to use metacity's
fullscreen shortcut, which is alt+F11 on mine .. if this isn't the
default, it can be found in Desktop Preferences -> Keyboard Shortcuts
(as Window Management/Toggle fullscreen mode).
Failing that, an odd trick I found with earlier versions of metacity was
to ask mplayer to go fullscreen (ie, hit the F key), then switch to
another workspace, and back again. When going fullscreen, the panels
were on-top, but when returning to the workspace, they weren't. Why this
worked, or if it's reproducable, I have no idea - but it made a good
short-term fix.
