Before you start just copy all the mahjongg files out of /var/lib/games.
There is one file per layout. When you have finished
upgrading/reinstalling replace these files and your high scores should
be back. The file format hasn't ever changed so there won't be any
problems with incompatibilities.

The same advice goes for any other games.

If you are just doing an upgrade then in theory the scores should be
preserved, but that depends on gnome-games having been packaged
properly.
