That. It's also describable as "the order the messages were added to the
folder in", which is usually "the order you received the messages in",
but not always.

Well... Sometimes messages have totally bogus dates (generally either
spam or people who don't realize their machine thinks it's 1970), in
which case if you sort by Date, those messages will end up far far away
from your other new messages.
It is more like sorting by the Received date (which you do by adding
that header to the message list using the column picker), except when
you move a message from one folder to another (in which case it would
end up at the end of the list in "unsorted" mode, but not necessarily in
sorted-by-Received mode.)
