Copy/Paste omits national charahters

I try to copy a section from this document in Evince:

The document is in norwegian. When I paste it onto a OpenOffice document I loose
the special norwegian characters - 'æ' 'ø' 'å'

Being all new to Linux, I don't know if this is a bug, or something I can solve
with "regional settings" on my computer. Anyway, I'd like to help out. Even
though my skills are few.
