In such a case the better behavior would be for Ekiga to try an alternate
port number and register using a non-standard port with a warning to that
effect. Any plans on implementing this more flexible strategy rather than
failing if the 5060 port is already in use for some reason?

As your explanations clearly show, both openser and ekiga try to use the
 same port 5060, which isn't possible. So the first of them you launch
takes the port, and the next can't.
