Not sure if this is now by design, or simply by the fact that g-c-c doesn't understand GNOME icon themes, but the file types capplet no longer displays icons for the various MIME types. This started to occur in GNOME 2.3/2.4 when the default icons were removed, and applications had to migrate over entirely to icon themes. If this is not a "by-design" thing, it would be nice to see those icons again.
