How about an option added to the performance preferences category of
nautilus that says "Do not show more than x thumbnails" just like the
"Do not make thumbnails for files larger than x" option?  That way if
you *do* have a huge amount of memory you can increase the number of
thumbnails shown and if you don't have a lot, you can decrease it.

We can set a sane default that can be overridden by users.
