GtkSourceView question

I have started using GtkSourceView in my application. I noticed
that when I load a language from a mime type, it applies the same
syntax tags as in GEdit because it uses the library as well.

I have two questions. First, where is the data for syntax tag
highlighting stored? Second, how can I change the values of the
tags in that file?
