I only want to include things that are difficult to get, and that depends on
the platform to a large extent.

It's not too bad on OS X. Look at the bootstrap/ directory to start with;
you won't have to build all of that stuff, but expat, for instance, is not
included with OS X 10.2, but required by fontconfig.

I've been working with a few other platforms, notably OS X, Solaris and
HP-UX, and attempting to get GARNOME building easily on all of these. If it
does, that should cover a fair whack of other systems too.

I have to sync up some changes with Nick though, but I could put out per
platform patches or something in the mean time...
