You are trying to build for Windows but passing x86 Linux libraries to be linked against. That will never work. You should not touch LD_LIBRARY_PATH and should be setting PKG_CONFIG_LIBDIR to where you have your Windows libraries like /usr/lib/i586-mingw32-msvc. You will need a cross compiled zlib in that path. You should probably read up on cross compilation a little bit more to understand library dependencies and build and host a little more as well.
