Have even tied to fix it by commenting out the reference to the gtk-doc.make file in the main Makefile; no joy.

Now what could this be?

I'm not sure (I typically have gtk-doc installed). What you could do is just `make install` in the gmime-2.2.25/gmime - that's all you really need anyway.
