As for installing only part of openoffice, the openoffice.org package is a meta package for all main components, run the command:
aptitude show openoffice.orgfor more details about the package. I would assume that only particular components could be installed if you specified which components you wanted rather than this meta package. One thing I don't know about because I haven't looked, is whether the package openoffice.org-gnome or openoffice.org-gtk which are needed for accessibility would allow partial installation of openoffice. Use aptitude to show details about what package depends on what, this should be able to provide the answer.
