You are both right, my iptable config was ... horrible :) ... in fact i prefer to do not post it because it's a shame :)
What i done is to clean any rule and start from FAQ script ... and it worked ;)
I began to understand what are != NAT ;) (cone, tunnel, way, routes ...etc)
So i can't respond to your question Damien, because I'm truing now on various kind of STUN server response :)
When i was having voice reception problems, my NAT was seen as a Cone NAT, but i can't be more verbose for now.
