Don't do that manually.
Use the gconftool or gconf-editor instead. There is a lot of caching
involved and moving this directory out physically yourself may be harmful.

Retrieve all current settings:
  gconftool-2 -R /apps/evolution > ~/myevokeys.gconf
Unset all settings:
  gconftool-2 --recursive-unset /apps/evolution
